Segment #4 -Chinese Pot Stickers
Recipe - Chinese Pot Stickers
HERE'S WHAT YOU'LL NEED:
- One 10 ounce package frozen spinach, thawed, drained and squeezed dry
- 2-3 scallions, finely chopped
- 1-pound ground pork
- 1 tablespoon grated fresh ginger
- 1 teaspoon orange zest
- 1 egg
- 1-teaspoon soy sauce
- 1/4-teaspoon Asian chili sauce
- 1 package of Wonton skins
- Peanut or vegetable oil
- Pot sticker press (optional, available in many grocery stores)
LET'S GET STARTED:
- In a medium bowl, combine the spinach, scallions, pork, ginger, orange zest, egg, soy sauce and chili sauce and mix thoroughly.
- Trim the wonton skin corners and place in pot sticker press one at a time. Add a scant tablespoon of filling to the center of each wonton; moisten the edges with water and squeeze press to seal edges. (If you don't have a press, fold wonton skin in half diagonally by hand to form a triangle).
- Place dumpling upright on counter and press slightly to create a flat bottom.
- Heat 2 tablespoons oil in frying pan and place several of the dumplings upright in oil. Cook over high heat until the bottoms are golden, about 2 minutes.
- Add 1/4 cup of water, cover and reduce heat to medium and simmer for another 2-3 minutes.
- Repeat with remaining pot stickers and serve with soy sauce or goyza sauce (recipe follows).
Goyza Sauce
Stir together in small bowl:
- 4 tablespoons light soy sauce
- 2 teaspoons sesame oil
- 2 tablespoons rice vinegar
