Segment #4 - Fish en Papillote
Recipe - Fish en Papillote HERE'S WHAT YOU'LL NEED:
- 4 fish fillets, boned and skinned
- 2 carrots, peeled and cut into matchstick lengths (julienne style)
- 2 celery stalks, julienne style
- 1 medium leek, julienne style
- 5 tablespoons of butter or margarine
- Salt and pepper to taste
- Fresh basil chopped or sprigs of your favorite herbs
- 4 sheets of parchment paper, 20-inches wide
- Scissors
LET'S GET STARTED:
- In a large frying pan, melt one tablespoon of butter and sauté the carrots, celery, and leeks until soft, about 2 minutes.
- Fold each sheet of parchment paper in half widthwise and cut in a large half-heart shape. Open the paper and place a fish fillet in the center near the fold. Top with 1/4 of the sautéed vegetables, one tablespoon of butter, a sprig of herbs and season to taste. Fold parchment back over fish and starting at one end, create many tiny folds one on top of the other to seal the package tight. Or, bake in an aluminum foil packet.
- Place the pouches on a baking sheet and bake for 15 minutes in a 425-degree oven.
- To serve, cut open packages and place on individual plates.
