Episode 127 - No Place Like Home
Segment #3 - Polenta Lasagna
Activity - Polenta Lasagna

HERE'S WHAT YOU'LL NEED:

  • 2 1/2 cups low-fat milk
  • 2 1/2 cups water
  • 2 1/2 cups yellow cornmeal
  • 3 tablespoons butter
  • 1 teaspoon salt

LET'S GET STARTED:

  1. Combine milk, water, cornmeal and salt in large saucepan.
  2. Bring to a boil stirring frequently with a long-handled spoon.
  3. Reduce heat and simmer gently for about 15 minutes. Continue stirring to prevent sticking until mixture is thick..
  4. Stir in 2 tablespoons butter. Set aside to cool.

Filling
HERE'S WHAT YOU'LL NEED:

  • 1/4 cup finely chopped onion
  • 1 tablespoon butter or olive oil
  • 1 egg
  • 1/4 cup grated parmesan cheese
  • 1/2 cup ricotta cheese
  • 1 10-ounce box frozen chopped spinach thawed, drained, and squeezed dry
  • 2 teaspoons chopped basil (optional) salt and pepper to taste
  • 1-1/2 cups prepared spaghetti sauce

LET'S GET STARTED:

1 Preheat oven to 425-degrees F. Butter an 8-inch x11-inch baking dish.
2 Saute onion in butter or olive oil until soft.
3 Let one of your kids beat the egg lightly with a whisk in a small bowl. Pour it into a mixing bowl with the sautéed onion, cheeses, spinach, basil and salt and pepper. Stir until just combined.

Layering:
1 Spread a layer of the cooked polenta in buttered baking dish.
2 Pour spaghetti sauce over polenta and spread evenly.
3 Add a layer of cheese and spinach filling.
4 Continue to layer ingredients, leaving a polenta layer on top. Grate extra parmesan cheese over the final polenta layer, if you wish.
5 Bake for about 30 minutes. Let stand for 10 minutes before cutting.
