Segment #3 - Vegetable Sushi
Activity - Vegetable Sushi (Older Child/Adult Version)
HERE'S WHAT YOU'LL NEED:
- 2 1/2 cups uncooked sushi rice
- 1/4 cup rice vinegar
- 1 package nori seaweed sheets
- 4-5 carrots parboiled and cut into 3-4" lengths
- 10-12 asparagus spears parboiled and cut into 3-4" lengths
- 2 avocados cut into strips
- 2 cucumbers with seeds removed cut into 3-4" slices
- 1 red bell pepper cored, seeded and cut into strips
- 1 bamboo mat
LET'S GET STARTED:
- Cook rice according to package directions.
- While still warm, place in a bowl and stir in rice vinegar.
- Set one sheet of nori, shiny side down, on the mat, with the mat’s reeds horizontal to you.
- Place about one cup of cooled, cooked rice on the nori, then, with moistened fingers, spread out the rice evenly to the side edges leaving 1" border at the top and bottom of the nori.
- Lay a few sliced vegetables horizontally across the rice.
- To roll the sushi, moisten the lower and top empty borders of the nori with wet fingers.
- Pick up the near edge of the mat and roll it around the bundle to the border at the top of the nori. Press bundle firmly to make a nice, smooth roll. Lift the top of the mat so the top and bottom nori edges meet as you finish the roll, and ensure that the nori seals well. Repeat for more rolls.

HERE'S WHAT YOU'LL NEED:
- 3 cups prepared sushi rice
- 1 cup mini bits of carrots or favorite vegetables
- 1 cup mini bits of ham, bologna or favorite meat
- cookie cutters
LET'S GET STARTED:
- Place cookie cutters onto a cookie sheet.
- Press cooked rice into each cutter and then gently press the vegetables and meat into rice.
- Refrigerate 15 minutes or more.
- Pop rice shapes out of cookie cutters onto platter.
- Serve with sauces.
