Segment #2 - Lunch - Thai Shrip and Noodle Soup
Recipe - Thai Shrip and Noodle Soup
HERE'S WHAT YOU'LL NEED:
- 8 cups chicken broth
- 1 1/2 cups shitake mushrooms
- 1/2 cup scallions cut in 1-1/2 inch lengths
- 1/2 cup snow peas cut in 1- 1/2 inch lengths
- 1 medium carrot
- 1 tablespoon soy sauce
- 1/2 teaspoon sesame oil
- 2 teaspoons finely grated fresh ginger root (optional) or 1 teaspoon powdered ginger
- 1/2 pound buckwheat noodles
- 6 medium shelled shrimp
- 2 tablespoons fresh basil cut into thin strips
LET'S GET STARTED:
- Peel carrot with a vegetable peeler and cut strips into 1-1/2 inch lengths.
- Remove stems from mushrooms and slice mushrooms into strips.
- Combine chicken broth, scallions, snow peas, mushrooms, carrots, soy sauce, sesame oil, and ginger in a large pot. Bring to a boil and simmer 20 minutes.
- Add buckwheat noodles and shrimp. Cook 3-5 minutes until noodles are tender and shrimp are cooked.
- To serve, sprinkle fresh basil in bottom of bowls and pour soup over basil.
Tips: Fresh shitake mushrooms can be substituted with dried mushrooms. Reconstitute with water for 30 minutes to an hour before using. OTHER ACTIVITIES FROM THIS EPISODE:
