Episode 120 - Take a Moment
Segment #4 - Vegetable Ribbon Salad & Artichokes
Recipe - Vegetable Ribbon Salad

HERE'S WHAT YOU'LL NEED:

  • 10 ounces colorful fettuccine pasta, cooked, drained and rinsed.
  • 2 carrots
  • 2 green zucchini
  • 1 yellow squash
  • broccoli stems
  • 4 scallions
  • 1/2 cup Caesar style salad dressing
  • 1/2 cup freshly grated Parmesan cheese

LET'S GET STARTED:

  1. With a potato peeler, peel thin strips of washed zucchini, broccoli stems, carrot, and yellow squash into a bowl. Include the skin of the vegetable, if desired.
  2. Tear several greens from the scallions into thin strips.
  3. In a large serving bowl, toss vegetables and cooked pasta. Add dressing and top with cheese.
