Segment #4 - Taffy
Recipe - Taffy

HERE'S WHAT YOU'LL NEED:

  • 2 cups sugar
  • 1 cup light corn syrup
  • 1-1/2 cups water
  • 1-1/2 teaspoons salt
  • 2 teaspoons vegetable glycerin
  • 2 tablespoons butter
  • 5 drops food coloring
  • 2 teaspoons lemon or lime juice
  • waxed paper

LET'S GET STARTED:

  1. Measure sugar, corn syrup, water, salt and glycerin into a large saucepan.
  2. At medium high heat bring the mixture to 255 degrees F (it should read "hard ball" on a candy thermometer).
  3. Stir in butter and food coloring.   Remove from burner immediately.
  4. Pour the mixture onto a greased cookie sheet with sides. (adults only).
  5. Use a metal spatula to fold the edges over (approximately 1/2") to keep them from hardening too quickly.
  6. When the mixture is cool enough to handle, brush on the lemon or lime juice.
  7. Mixture is now ready to pull.
  8. Butter your hands well and stretch the taffy until it is elastic and satiny, about 5-15 minutes.
  9. Pull into a long rope and cut into 1-inch bite-size pieces using butter knife or kitchen scissors.
  10. Wrap pieces individually in wax paper squares.

    Note: Remove hand jewelry before pulling.
